- 1-2 cups Zucchini (Cut up)
- ½ -1 Diced Onion (or One Bunch Gr. Onions cut up)
- 1-2 Tbsp Olive Oil
- 1 Basket Grape Tomatoes
- Salt and Pepper to taste
- Chopped Basil
- Feta Cheese (Fat Free at Trader Joes)
Heat a small amount of olive oil in a non-stick pan and cook diced onion and zucchini for a few minutes. Add grape tomatoes, salt and pepper and cook until tomatoes are soft. Add chopped basil, stir with zucchini mixture and plate. Sprinkle with Feta if desired.
