Kale Berry Salad

Salad:

  • 4 cups kale leaves
  • 1 cup fresh blueberries
  • 1 cup fresh blackberries
  • ½ cup chopped English walnuts

Dressing:

  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar

Directions

  1. Wash kale and pat dry.  Cut away stems,  tear leaves into bite-sized pieces, and add to salad bowl.
  2. Wash berries and add to salad.
  3. Mix dressing, drizzle on top and toss.
  4. Top with chopped walnuts, which are high in omega 3 fatty acids.
