Susan Newell's Cerviche

 
  • 1 lb. Scallops  (Some people advocate marinating the scallops in lime juice to “cook” them, but I flash boil them.)
  • Chopped Green Chilies (Two small cans)
  • Chopped Tomatoes (Two cans chopped tomatoes can be substituted for fresh tomatoes.)
  • Chopped Yellow Onion (One large)
  • Olive Oil (About ¼ cup)
  • Lime Juice (About two cups)
  • Garlic (About six cloves squeezed)
  • Pinch of Oregano

Combine all ingredients and let marinade.
