Healthy Sauté is a cooking method that allows you to have the flavor of sautéed vegetables without using heated oils. Heat the recommended amount of broth (indicated in the recipe) in a stainless steel skillet over medium heat. Once the broth begins to steam, add vegetables, cover, and cook for the recommended amount of time—usually from 3 to 5 minutes. Depending on the type of vegetable you are cooking, the recipe may ask that it be cooked uncovered for a few minutes before serving to eliminate excess liquid. You may also need to add slightly more broth for some vegetables. Toss with extra virgin olive oil after removing from heat.
