Roasted Sweet Potato with Spices


  •  1 medium sweet potato,
  • cut into 1” pieces
  • T olive oil
  • 1 t each cumin and
  • coriander
  • 1/8 t sea salt
  • 1/4 t freshly ground black pepper
  • 2 T fresh cilantro


Preheat oven to 400°. In a bowl, combine sweet potato, olive oil, cumin, coriander and salt. Toss well to coat. Arrange sweet potato on a baking sheet and roast about 20-30 minutes, stirring and shaking every 10 minutes. Brown evenly. Remove from oven, sprinkle with pepper and cilantro. Enjoy! Counts as 1 once daily starch, 1 fat Yesterday!

I want to be an inspiration...
My internal GPS took me to Healthy Inspirations. When I saw the ads, I was skeptical. Are these real? Is this a real person with daily stress in her life like me? When I joined Healthy Inspirations, I had no idea I was getting a sorority of sisterly bonding.

Everyone here has the same goal. Whether you are 20 or 79- if you have 15 or 120 pounds to lose-this is the place for you. The staff is great. You feel comfortable, and welcome. The
counseling is very important, as well as diet, exercise and relaxation.

I want to be an inspiration to others, as those that have succeeded at Healthy Inspirations have been to me. I am now happier, healthier and strive to lead an active lifestyle. This is not a fad. It’s a lifestyle change. I don’t feel deprived. I have learned to substitute bad choices for good choices.
I admit at times I was embarrassed by my BEFORE photos, but as my friends have reminded me- I should be PROUD! I worked very hard to achieve my goal and I look and feel great. My confidence level has increased, my energy level is up, and I am not an any medications. I even applied for and received a promotion at work. I am very happy with my weight loss experience with Healthy Inspirations.
